Homemade Chunky Apple Sauce

This chunky apple sauce is sweetened with brown sugar and flavored with cinnamon, cardamom and vanilla. It's my own recipe with roots in Germany (called Apfelmus there), and I love serving it with my Kartoffelpuffer (German potato pancakes), Quark pancakes, Kaiserschmarrn, Ghackets mit Hörnli (a Swiss noodle dish).

Peel, core and chop apples into medium sized pieces. Immeditely toss in the lemon juice.
⅖ kg apples¼ Tbsp fresh lemon juiceCombine with water, spices, salt and brown sugar in a medium sized pot and bring to a boil.
1 Tbsp brown sugar½ cinnamon stick⅕ tsp ground cardamom½ pinch salt50 ml waterOnce boiling, stir, cover with a lid, and cook on medium for 10 minutes, stirring occasionally.
Remove from heat and puree to your liking. I use my favorite ever immersion blender and I like some chunks, so only pureed about half of my apples.
Add vanilla and stir.
¼ tsp pure vanilla extractServe warm or cold. Some of my favorite German recipes using apple sauce are my Kartoffelpuffer (German potato pancakes) and quark pancakes.
